Directions

Soak watermelon rinds in saltwater overnight. Cook until tender in boiling water. Put vinegar and sugar into a large kettle and add spices tied in a bag.  Boil this 10 minute. Simmer 1 hour or until syrup is thick. Add watermelon rind and simmer for another hour. Pack into pint jars and seal hot.
