Directions
Brown meats. Drain off all the fat. Add herbs, onion and tomato sauce and paste. Simmer uncovered for 1 hour, stirring occasionally. I like this to be a very thick mixture with very little juice. Cook noodles. Drain, rinse and pat dry with paper towels. Combine cottage cheese, eggs, Parmesan cheese, parsley flakes and cheddar cheese in a bowl (sometimes I use half cottage and half ricotta cheese). Spray 9 x 13 pan with Pam. Put in a layer of noodles, then a layer of cottage cheese filling, then a layer of meat mixture and cover with mozzarella cheese. Repeat. Sprinkle a little more Parmesan cheese over all. Bake at 350 degrees for about 1 hour. Taste a little right out of the middle to make sure it is hot clear through.
