Directions
Cook sugar, corn syrup and water in a heavy saucepan over low heat. Stir only until sugar is dissolved. Cook until a little tried in cold water forms a soft ball (236 degrees). Beat egg whites until stiff, continue beating and pour half the syrup slowly over the beaten egg whites. Continue beating while cooking the rest of the syrup to hard ball stage (250 degrees). Pour slowly over egg and syrup mixture. Continue beating until mixture forms soft peaks and begins to lose its gloss. Add vanilla and nuts, if desired. Quickly, drop divinity from a teaspoon, pushing off with a second spoon onto a cookie sheet lined with waxed paper. Twirl top. (Helps if two people can drop divinity onto waxed paper. If divinity becomes too stiff for twirling, add a few drops of hot water.)
